Simple Summer Salad
rinse & dry dry all raw ingredients ..no need to cook
8 small purple kale leaves
10 or so 'pencil' asparagus tips
some broccoli rabe blossoms
1 small bunch watercress cut up
1 big ripe summer tomato ,sliced
1 organic egg soft boiled (3 1/2 min)
1 1/2 tblsp of oil
1 tblsp balsamic vinaigre
lightly toss vegetables w oil & vinaigre
top w softboiled egg
sprinkle w salt flakes...

Tijan..
fun french style vegetable dish:
slice green& yellow zuchini,
small eggplant & tomato of equal size
in 1/2" thick rounds,
pack very 'tight' in casserole
drizzle with mixture of:
garlic, olive oil, fresh thyme,salt
cover w tin foil
bake in 350 degree for 'bout 30+ minutes ...
take of the foil & sprinkle with
grated aged parmesan
15 more minutes till done:
fab dish to prepare one day in advance
