fun french style vegetable dish:
slice green& yellow zuchini,
small eggplant & tomato of equal size
in 1/2" thick rounds,
pack very 'tight' in casserole
drizzle with mixture of:
garlic, olive oil, fresh thyme,salt
cover w tin foil
bake in 350 degree for 'bout 30+ minutes ...
take of the foil & sprinkle with
grated aged parmesan
15 more minutes till done:
fab dish to prepare one day in advance
